Husband and I were having trouble finding gluten-free enchilada sauce in the grocery store, so I decided to try making a gluten-free version of this recipe for "Easy Red Enchilda Sauce" from Budget Bytes.

I only had to change one thing to make this recipe gluten-free: substitute Bob's Red Mill Gluten Free 1-to-1 Baking Flour for all-purpose flour. It worked perfectly. Bob, if you ever need a new spokesperson, I'm your girl.

As you can see in the glorious photographs to the left, I began by whisking together olive oil, chili powder, and flour (all-purpose or Bob's, depending on how you feel about gluten consumption) over medium heat.
Once that was all whisked up and bubbly, I added tomato paste, cumin, garlic powder, cayenne pepper, and water, and continued whisking.
After a few minutes, the whisking worked magic, and the bubbly red mixture thickened into a smooth, gluten free, enchilada sauce.
The end result was spicy, tomato-y, yummy, and perfect for making gluten free Mexican food.
